A Yummy (low carbon) Alternative To The Breakfast Fry Up

As our bircher muesli recipe was so popular last month we thought we’d share another yummy, scrummy breakfast recipe. An alternative to the traditional fry up, this healthy, low carbon breakfast is ideal for those lazy winter Sunday mornings.

Ingredients (Serves 2)

2 free range eggs

A tin of butter beans

A tin of tomatoes (organic if possible)

A couple of pinches of black pepper


1.In an oven proof dish pour in the tomatoes and butter beans.

2.Mix together the beans and tomatoes and add the black pepper.

3.Make two wells in the tomatoes and beans mixture for the eggs.

4.Break the eggs into the wells

5. Bake in the oven at 200c for approximately 20-25 mins or until the eggs are cooked.

Serve with warmed crusty bread or toast.
